The island, formerly Tank Island, was originally owned by the US Navy and was used as a fuel storage facility. In 1986 the island was sold at auction along with property on mainland Key West called the Truman Annex. The fuel tanks were disassembled and reused as an artificial reef just off Key West. In 1996 construction of the Westin Hotel & Resort began and Sunset Key started to be developed for residential luxury homes as well as guest cottages for the Westin.

Sunset Key Island is now a sanctuary just 500-yards from Key West. The island has a fabulous restaurant called Latitudes which is open to the public. Latitudes is open for breakfast, lunch and dinner daily. They offer a special dinner menu on holidays. The restaurant and bar are nicely appointed with comfortable seating under an open air verandah or out on the beach. At night the ambiance is unsurpassed with gentile lighting from the tropical grounds, tiki torches, and the twinkle of the lights of Key West in the backdrop.
